With the hitch on your 2007 Honda Odyssey you will have a distance of 5 inches from the center of the hitch pin out to the furthest point out on the rear bumper. So you will need a fold up rack that when folded up will have a distance of greater than 5 inches from the center of the hitch pin to the nearest upright bar.

However, I'd recommend checking the weight of the bikes with the batteries removed.
